The Fruit of Our Labor
Sonoma County has long been recognized as one of California's premier agricultural
regions, in particular its fertile Alexander Valley. Crops simply flourish here,
the most well-known being the many varieties of grapes used to produce world-class
wines. The conditions are also ideal for our treasured Manzanillo olives.
Every autumn, at the peak of the season, we harvest them
in a labor of love. We spend the morning handpicking the
500 trees that blanket our hillside grove. To prevent the
delicate fruits from gathering moisture that may dilute their
taste, they are cold-pressed that very afternoon.
A combination of this harvest and production method with the absence of filtering
before bottling offers simply the best tasting olive oil.
Most Manzanillo olives are bottled to be eaten whole because
of their delicious flavor and typically low oil content.
But we are so passionate about the virtues
of this popular olive that we continue to process it for its ultra-premium
oil. Its extraordinary flavor is well worth the extra effort.
